The centuries-old tradition of ripening prosciutto in the Karst region has created a name and a reputation for the product.<\/p>\n<p>It used to be prosciutto, cured in the Karst. It was intended for sale to merchants and innkeepers, and was also taken to Trieste. Initially, only the aforementioned had a ham rack. At home, it was only cut by my father or mother on special occasions. The rest of the family waited in line, bread in hand. Today, prosciutto is part of every fine feast and represents a special culinary experience. Both the outer and the inner flesh must be sufficiently ripened, otherwise it will not be possible to cut uniformly thick and long slices.
